I just gave Kurt 8 Black Apricorns so I can use some Heavy Balls on this Snorlax that is blocking my way.

Red are Level Balls. White are Fast Balls.

However I do think you have to set it ahead/back to the next/previous day, you can't battle twice in the same day just by going back/ahead a few hours.
As for what does completing the game mean, well that's up for debate. It all depends what your goals. Here are the mains one people usually have:
1. Defeat all 16 Gym Leaders, the Elite Four, Champion, and Red.
2. Complete the Pokedex.
3. Get the Gold Commemorative Prints for all the Facilities in the Battle Frontier.
4. Capture at least of every species of Pokemon (commonly called a "living Pokedex")
5. Get medals for each of your Pokemon in the Pokeathlon.
And other goals, such as maybe training each of your of Pokemon to level 100.
You can battle a gym leader as many times as you want during the time you can call them for rematches until the time ends
you can change the DS' clock to fight them again
whenever you want
as long as you want
as many times as you want
Definition of finishing the game in HGSS would be:
Beat the Elite 4
Beat 100 trainers in the battle tower.
Get a pokemon with five Shining Leaves to Lyra.
Win all the events in the Pokethlon.
And, of course, catch all the pokemon! (minus event-exclusive such as arceus and darkai i believe)
How do you know you've finished the game? Your trainer card is now color black and with five golden stars.

Really, you would think Nintendo would at least force you to move to a different day, being this is sort of a game breaking "trick" for training your Pokemon, lol!

Ah yes, forgot about the Trainer Card. But remember that that's just getting your Trainer Card to be Black with all five stars, everyone's definition for "completing" the game is quite different. For example, to get a star you just need to defeat 100 trainers in the Battle Tower, though if you just do that you may complete your Trainer Card but you don't have the five gold Commemorative Prints.
Got the second Prima book today, which contains not only all the Pokemon and Kanto guide, but also the Battle Frontier and tips and most notable of all a poster similar to the one from their Diamond and Pearl Pokedex book. The two major changes that made this poster larger than the last one are that all the Pokemon that weren't involved with the old poster (Rotom's additional formes not included) and that while the original used game sprites, this one used official artwork.
